Executive Chefs at Vi Reveal Secrets to Eating Well and Dining in Style in Retirement

Vi executive chefs have received customized training by the Culinary Institute of America.

Chicago, IL (PRWEB) October 26, 2011

The results of a recent study by the University of Maryland indicate that individuals should not give up eating nutritious foods as they age. This is a fact not lost among the executive chefs who oversee menu planning and meal preparation for residents living at a Vi continuing care retirement community.

Vi chefs have received customized training by the Culinary Institute of America on nutrition, healthy cooking and baking techniques, flavor dynamics and food and wine pairing. And, because Vi offers menu selections that are generally lower in sodium, fat and sugar – yet high in flavor – the cuisine satisfies body and palate, enabling residents to eat well and always dine in style.

The 10-year study conducted by the University of Maryland examined the eating habits of approximately 2,500 test subjects between the ages of 70 and 79. The study suggests that older adults in their 70’s who eat healthy foods increase their longevity.

Eating well in older age does not mean having to compromise a fine dining experience, according to the Vi executive chefs.

“We focus on texture, flavor and digestive health needs,” said Jeffrey Weston, executive chef at Vi at Silverstone in Scottsdale, AZ. “Simply put, my culinary philosophy is fresh, quality ingredients prepared well.”

Anthony Santomauro, executive chef at Vi at Lakeside Village in Lantana, FL, says when he cooks fish, he always make sure it’s the freshest fish that is available: flounder, grouper, yellowtail snapper, ahi tuna or U8 scallops. “When it comes to creative cooking, I have always been inspired by fresh fish,” he said.

Also found in Florida is Vi at Aventura, where executive chef Robert Ibgui said a Thursday evening chef’s menu gives him a chance to provide the residents a gourmet experience. “I use as many seasonal products as I can and I also get ideas from the residents,” he said.

Shep Drinkwater is executive chef at Vi at the Glen in the northern Chicago suburb of Glenview. “We keep our menus fresh by changing specials daily and changing everything else we can as much as possible while always offering a quality product,” he said.

“Our residents enjoy the comfort foods,” said Vince De Mar, executive chef at Vi at Grayhawk, also in Scottsdale. “However, many of them desire a greater variety in their diets and enjoy stepping outside the box on occasion. I get great enjoyment when I’m able to display my passion and creativity through my food.”

Jim Smith, executive chef a Vi at La Jolla Village in San Diego, CA., said older adults may have aging palates, but they still enjoy different things and variety when it comes to their dining experience. “Fresh ingredients and top quality beginnings will yield great results on the plate,” he said. “I also instill quality in my sous chefs and cooks. If it doesn’t look right, don’t serve it.”

At Vi, menus offer a wide variety of options to suit residents’ tastes and preferences, including regional favorites, traditional home-style meals and new recipes. Each community features stylish dining venues and elegant private dining rooms are perfect for parties and special occasions.

Vi, formerly Classic Residence by Hyatt, was founded in 1987 as a developer, owner and operator of older adult living communities. The company is dedicated to enriching the lives of older adults by providing high quality environments, services and care. Vi currently operates ten continuing care retirement communities (CCRCs) and nine rental communities under a family of brands nationwide. What’s the best eating plan or diet plan for a 5 mile run?

No Comments 11 March 2012

Question by : What’s the best eating plan or Tone Detox plan for a 5 mile run?
I’ve been running 2 miles a day. Last time I tried 4 but I took a five minute break half way. So what’s the best way to gain energy while trying to lose weight? I’m going on a 700 calorie Tone Detox and running. What should do? Don’t give me links write it out.

Best answer:

Answer by Betty B
It’s hard to exercise just eating enough to cover your BMR (as to not get a lower metabolism) so you can use exercising to lose body fat but on a 700 calorie Tone Detox, you’re asking for trouble, not only sending your metabolism down the drain but not having enough energy to exercise properly.

Wear a heart monitor so you can stay in your THR zone (Target Heart Rate) zone and never feel exhausted or out of breath as you should not have to take a five minute break half way (if you do, you could feel nausea or dizziness). Choose the Aerobic Zone for weight loss, 70 to 79% of your MHR (Maximum Heart Rate).

Your MHR is 220 minus your age in 80% of cases…you might have a naturally lower or higher RHR (resting Heart Rate) so just adjust your heart monitor accordingly to how you feel. If you cannot say supercalifragilisticexpialidocious without having to take a couple of breaths…you need to slow down and walk for a minute.

Warm up for 5 to 10 minutes until you get up in your zone (walking faster and faster until you reach your zone and start jogging), then stay in your zone, using walking to go back down when your heart beats get too fast because at 80%, you get into the Anaerobic Threshold Zone, when fat burning shuts down (it’s a good zone to improve cardiovascular health but not to lose body fat).

Once you get down and under 70%, your watch beeps so you can resume jogging until it beeps again (when you reach 80%) so you start walking again, then your watch beeps again when you can resume jogging unless you feel “spent” and just keep walking slower and slower for 5 to 10 minutes to cool down (going back down through the Temperate Zone, 60-69%, the Healthy Heart Zone, 50-59%, and back down to you RHR).

You should eat enough calories to cover your Basal Metabolic Rate (BMR) or your body will adapt to a low caloric intake and lower your metabolism, making it very hard for you to use your body fat. And then, as soon as you would eventually start eating normally again, you would make body fat very easily, because you would have a lower metabolism and therefore regain all the weight you lost and keep going up, unless you exercise A LOT. Also, if you’re younger than 21, you need to eat more when having a growth spurt so you don’t stunt your growth (you get ravenous).

Women’s BMR:
655 + (4.35 x weight in pounds) + (4.7 x height in inches) – minus (4.7 x age in years)

Try to find 2 or 3 different aerobic activities to challenge your body in different ways (I walk/jog, bike and swim) as just walking/jogging would mostly be a lower body exercise.

AND, most importantly, weigh train to gain muscle mass which is the weight loss miracle. As a woman, you only need to do calisthenics and use small weights. With more muscle mass, you look better, thinner, toner but also you are stronger so your aerobics get easier and more efficient and you burn more calories while exercising.
Also carrying grocery bags/going up the stairs or anything else is so much easier when you have some muscles in your arms/legs.

Once you get more muscle mass, your metabolism goes up on a 24/7 basis. Each pound of added muscle mass needs 35/50 calories a day to maintain (not even counting the calories for the exercise). It’s 12 to 18 thousand calories a year…it’s 3 to 5 pounds of body fat a year that you would either lose or at least not gain (if you eat too much). And that is just for one pound of extra added muscle mass.
Also on those days when you’re resting and feeling a little soreness because your muscles are repairing stronger, you can rest assure that you’re burning a lot of calories even if you’re not moving.

“What’s the best eating plan or Tone Detox plan for a 5 mile run?” you asked.
First and foremost, eat enough to cover your BMR and have a good high carbs meal about 2 hours prior to your run, so by then your stomach is empty (you cannot run if your stomach is still processing food) but you have a good high blood sugar level for energy.

Sip water (like the equivalent of a cup/glass/8oz every 15/20 minutes…that should be automatic, I LOVE to drink water while exercising, otherwise, I’m not a big fan of water) and add some sugar to your water to replenish on the way if you need more energy.

If you exercise more than 2 hours, then you’ll need sport drinks that contain electrolytes. Always use sport drinks (or Gatorade) when drinking more than 8 cups of liquid in a 2 hours window. Water intoxication (stupid people doing water drinking contests and dying) happens when you deplete the electrolytes and then your brain goes berserk.

Eat Well and Live, a health cookbook by cancer survivor Gwynn Palmer, reveals Rules Of Eating as well as her healing Tone Detox for those struggling with cancer and ill health. In honor of National Colorectal Cancer Awareness Month, celebrated from March 1st to the 31st, she is promoting some of the best Rules of Eating.

“The premise of the Eat Well and Live cookbook it that it utilizes high enzyme foods that break down in the system and helps one absorb nutrition through the cells,” says author and cancer survivor Gwynn Palmer.

Here are some of her Rules of Eating:

1. East as much raw food as you can – up to 65 percent. Eat raw food before cooked food it possible – food will digest more thoroughly.

2. Never eat fruit after a meal, if you want to avoid the dreaded gas.

3. Eat Slowly. Put your fork or spoon down after each bite. Chew each bit a minimum of 25 times. Digestion begins in the mouth. Liquidize all food before swallowing.

4. Do not eat before going to bed. The stomach should have all its work done before you lie down for the night. If you get restless or hungry, drink water.

Gwynn followed the Dr. William Kelley Cancer program that utilized enzymes and Tone Detox. A former health food restaurant owner and Colon Therapist, Gwynn Palmer was compelled to write a cookbook to help others. Her desire was to make it easier to maintain the Kelly program creating recipes that are palatable and easy to prepare.

Through her work as a Colon Therapist, she has also seen her recipes provide help to those with chronic illness and those cleansing.

Gwynn has taken a list of allowed foods and made them into delightful, health giving recipes that are creative and full of live energy.
